From the kitchen: warming soups
There’s nothing better than a steaming hearty bowl of soup at this time of year. The perfect cheery companion for lunch or dinner and moment of respite after a cold blustery walk or chilly day in the workshop. Here, we’ve gathered our favourite soup recipes for you to enjoy.
CHESTNUT SOUP WITH SAGE & CLOTTED CREAM
A rich and creamy soup that lives beyond the festive season, from one of our favourite local Cornish chefs Emily Scott.
FRENCH ONION SOUP
James’ favourite soup, the secret here is in your beef stock (sorry vegetarians).
The best we’ve managed is on Boxing Day with our leftover rib of beef, gravy and stock from Christmas day. Serve with gruyere cheese toasts for the biggest hug.
CURRIED ROOT VEGETABLE SOUP
A favourite in our household, especially for using up our pumpkins in October, this soup can really be made with any combination of root vegetables, parsnips, butternut squash, pumpkin, sweet potatoes and is often a quick Monday supper with leftover roast veg from our Sunday lunch.
CHICKEN VEGETABLE AND PEARL BARLEY BROTH
There is a ready made Yorkshire Providence soup that we used to devour on cold winter nights in London. This recipe is a close contender and a wonderful way to use up a roast chicken carcass. Pearl barley gives you a lovely nutty flavour.
BORSCHT
Originating in eastern Europe, there’s some arguments between countries as to what the original recipe is! We like the sweet and sour contrast of the beetroot with sour cream, horseradish and dill with a little kick of paprika to wake you up!
CHICKPEA TOMATO 🍅 & BREAD SOUP
We love a minestrone soup, piled up with beans and pasta and this recipe is of a similar ilk. It’s a take on a ribollita and is almost a stew, super hearty filling and satisfying.
